Aubergine Au Gratin ( Healthy Diabetic Recipe )

A delicious and healthy dish covered with a healthy sauce, cheese and bread crumbs. Suitable for diabetics.

Ingredients

For the Sauteed Vegetables

  • 1 teaspoon oil
  • 1 cup finely chopped mixed vegetables
  • salt and freshly ground black pepper powder to taste

Other Ingredients

  • 1 teaspoon oil
  • 2 teaspoons finely chopped garlic
  • 2 big brinjals , each cut into thin slices
  • 1/4 teaspoon oil for greasing
  • 1 cup pizza sauce
  • 1 cup low calorie white sauce
  • 1/4 cup whole wheat bread crumbs
  • 1/2 cup grated mozzrella cheese

A sinfully delicious baked dish covered with a healthy sauce, whole wheat bread and crumbs and mozarella cheese.

Directions

Step 1
To saute vegetables, heat the oil in a non-stick frying pan, add the vegetables, salt and pepper, mix well and sauté on a medium flame for 3 to 4 minutes, while stirring continuously. Sprinkle little water while cooking. Keep aside.
Step 2

Step 3
In a greased baking tray, arrange a portion of brinjal slices at the bottom to make an even layer.
Step 4
Pour the pizza sauce and spread it evenly to make a layer.
Step 5
Put the sautéed vegetables and spread it evenly to make a layer.
Step 6
Arrange the remaining brinjal slices evenly over it.
Step 7
Pour the white sauce and spread it evenly to make a layer.
Step 8
Sprinkle the breadcrumbs evenly over it and top with cheese.
Step 9
Bake in a preheated oven at 200°c (400°f) for 15 to 20 minutes or till the cheese melts.
Step 10
Serve hot.
