Avocado Summer Salad

Avocado salad is a very quick, healthy and  refreshing summer salad made with lettuce, avocado, spring onions and tomatoes. A real treat for those hot summer days!

Ingredients

  • 1 avocado peeled and mashed
  • 2 onions chopped
  • 2 tomatoes chopped
  • 4 tablespoons lettuce chopped
  • 1 green spring onion chopped
  • salt to taste
  • pepper to taste

For dressing

  • 2 tablespoons olive oil
  • 1/2 tablespoon white vinegar
  • salt to taste
  • pepper to taste
  • 1 teaspoon lemon juice
  • 1/2 teaspoon sugar

Note

This colorful medley of lettuce, avocado and tomatoes makes a delicious and nourishing summer dish.

Directions

Step 1
Mix all ingredients for dressing and chill.
Step 2
Mix all ingredients for salad except lettuce and chill.
Step 3
Just before serving, pour dressing, add lettuce, toss well.
Step 4
Serve chilled.
