Corn And Spinach Rice

A delicious and nourishing combination of rice cooked with spinach and corn. The best part is that it is super easy and quick to cook. A must try!

Ingredients

  • 3/4 cups Corn kernels,blanched
  • 2 medium bunches Fresh spinach leaves,finely shredded
  • 2 cups Cooked basmati rice
  • 2 tablespoons Oil
  • 1/4 teaspoon Cumin seeds
  • 1 1/2 teaspoon Ginger-green chilli paste
  • Salt to taste
  • 1 tablespoon Lemon juice

Note

A delicious and satisfying rice preparation with spinach and corn.

Directions

Step 1
Heat the oil in a deep non stick pan. Add the cumin seeds and when they begin to change colour, add the ginger-green chilli paste and sauté for thirty seconds.
Step 2
Add the corn kernels. Mix well and sauté for thirty seconds.
Step 3
Add salt.
Step 4
Add the spinach leaves and toss well. Cook for one minute.
Step 5
Add the cooked rice, mix well. Add lemon juice and toss well.
Step 6
Serve hot.
