Vegetable Pasta

Whole grain pasta and cooked vegetables with savory tomato sauce makes this dish sinfully delicious. Serve it with fresh green salad or slice of toasted bread.

Ingredients

Pasta

  • 2 cups whole grain penne pasta
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Vegetables

  • 2 sliced carrots
  • 1/2 cup chopped green beans
  • 1 chopped bell pepper
  • 1/2 cup chopped cauliflower
  • 1 sliced zucchini
  • 2 teaspoons olive oil
  • 1 teaspoon salt

Tomato sauce

  • 6 diced tomatoes
  • 15oz 1 can of diced tomato
  • 2 tablespoons Olive oil
  • 1 tablespoon chopped basil
  • 1 teaspoon Italian herb
  • 1 teaspoon red chili flakes
  • salt to taste
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar

Preparing Pasta

  • 2 tablespoons olive oil
  • 1 tablespoon chopped basil
  • red chili flakes to taste

Note

This is a simple pasta that can be cooked for lunch or dinner.  Being whole wheat, this is a heathier version of the regular pasta we eat.

Directions

Step 1
In a large pot boil the water with salt and oil.
Step 2
After water comes to the boil add the pasta.
Step 3
Cook the pasta until it is just tender, not too soft. Drain the water and set pasta aside.
Step 4
Heat the oil in a frying pan over medium high heat.
Step 5
Add vegetables (carrot, green beans, bell pepper, mushrooms, and zucchini) to skillet and sauté until they are nearly tender.
Step 6
For tomato sauce, mix the cornstarch in ¼ cup of water and keep aside.
Step 7
Heat the olive oil in a saucepan and add the basil, Italian herbs, and chili flakes stir and add tomatoes.
Step 8
Let the tomatoes cook until they become pasty.
Step 9
Next add cornstarch, salt and sugar to the tomato sauce, cornstarch will give thickness to the sauce.
Step 10
Next add the sauté vegetables to the sauce and cook for few minutes on medium heat until sauce come to the desirable thickness.
Step 11
To prepare the pasta, heat the oil in a saucepan and add basil and chili flakes stir for few seconds.
Step 12
Next add the drained pasta and sauté for a minute until pasta is well coated with oil.
Step 13
Pour the vegetable sauce over the pasta, serve hot with slice of French bread and salad.
