Chunky Cheese and Vegetable Sandwich

The recipe calls for delicious creamy chunky vegetable spread to be layered upon bun rolls. It is perfect for breakfast and a filling and healthy substitute for an early dinner.

Ingredients

  • 3/4 cups grated cottage cheese
  • 1/4 cup boiled and chopped carrots
  • 1/4 cup red, yellow and green capsicum, chopped
  • 1/4 cup boiled corn
  • 1/4 cup boiled green peas
  • 2 tablespoons chopped celery
  • 1 teaspoon chopped parsley
  • 2 tablespoons milk
  • 2 tablespoons grated mozzrella cheese
  • 2 teaspoons butter
  • salt and freshly crushed pepper to taste

Note

Creamy chunky vegetable spread that is layered upon bun rolls make this recipe a real treat.

Directions

Step 1
For the chunky vegetable spread, mix all the ingredients in a pan and heat for a few minutes till the cheese melts. Keep aside.
Step 2
Cut each hard roll into half. Only the bottom half is used in this recipe. The top half may be used for some other recipe.
Step 3
Scoop out the centre soft portion of each bottom half.
Step 4
Brush with melted butter.
Step 5
Bake in a hot oven at 200°C (400°F) for 5 minutes.
Step 6
Reheat the filling and spoon a little of it in the centre of each scooped bottom half of the roll.
Step 7
Garnish with a sprig of parsley and serve immediately.
